It's soup season! Last week I made chicken tortilla. Today's lunch was leek, potato and mushroom. Now, what should I make next week?

Last week we had baked potato soup and black bean soup. Today was chili. Mmmmm....chili....

oh, yes. we've had chili too, but i messed it up by using tomato sauce instead of tomatoes. it was way too sweet for my liking... perhaps we'll try that one again. and we didn't have any cornbread with it either. love cornbread!

I made a super yummy and simple butternut squash soup. Squash are cheap right now, easy to use (just cut 'em open and roast them from about an hour) and make healthy, tasty soup. I just blitzed the roasted squash up with sauteed onion, a little olive oil, chicken stock and a bit of garam masala and curry powder - using my beloved immersion blender. Greg didn't think it was "soupy enough", telling me it had the texture of baby food. So last night I reheated his with extra chicken stock and that solved the problem.
I also have plans for a lentil/ham soup using my new crock pot. Cold, rainy weather just begs for soup!!

The mushroom / leek / potato soup was wonderous. I'm hoping for veggie next week :D

I have a great tomato soup recipe from Nordstrom's... my folks went there and my dad liked the soup so much they kindly gave him the recipe. I just made my own variation of it last week.
